Recipes for Chiles...

Trent's special salsa - there really isn't a recipe (a family secret for, ohh, four months), but for those of you who want it here it is...
1 tomato
1/2 red or white onion
1/2 red bell pepper
1/2 yellow bell pepper
2 serranos
2 sweet peppers (any variety)
3 habaneros
juice of 1 lime
2 Tbsp sugar
2 Tsp vinegar
Ok.  Real Simple. Dice everything 'diceable'.  Stir and serve.  I usually add more habs but my wife yells at me ;-)  This is really colorful and looks quite nice as well as beating the pants off any store salsa.

Habanero flakes - this might take a while, but it is definitely worth it...
Take about 1/2 lbs of Habaneros and remove the seeds.  Slice them in halves or thirds.  Place them in the oven @ 150 in a glass baking dish.  After about 8 hours or when dry take them out and place them in a food processor and grind them to flakes.  Please don't breathe in the flakes and be careful with your eyes when doing this, it HURTS, believe me.  The flakes can be used for any kind of seasoning.  A little goes a long way...

Tropical Salsa - This salsa is for those who say "there ain't nothing too hot".  One taste of this brew will cure them of any bad english +/- a few choice explicatives!!  It also tastes SO good!!!  Use it on fish or chicken or as a reg salsa
 
1/2 fresh pineapple
2 mangos
1 papaya
juice of 2 limes
juice of 3 lemons
2 Sweet Red Peppers
1 red onion
1 serrano (add, say an anaheim for more green color- hey its gotta look good, too!)
8 habaneros
Dice it up and let it marinate overnight! (marination, is that a word? is the key!)  Wear gloves when dealing the habs - it makes clean up much easier...  Enjoy!

I just had an awesome sauce...  It's Bronco Bob's Raspberry Smoked Chipolte Sauce.  YUMMY!!  It's got a smokey low key heat with a sweet taste of raspberries.  I used it to marinate some shrimp.  Wow, they were good.

"My Tobasco Sauce" This is a good recipe to make your own brand of sauce to put on whatever you like, you can mix and match peppers or stick with a pure batch of habs...  Add a whole pepper to your jar for a cool look!
What ya need:  1 clean sterile jar/bottle.
                            Approximately 1 - 2 lbs of peppers of your choice.
                            Red wine vinegar
                            Water
                            1 Tbp white sugar
                            optional:  1/4 cup vodka or rum
What ya do:        Mix 1/2 part vinegar and 1/2 part water in steel container ( I used about 3- 4 cups of each)
                            Heat up this concoction with good air flow!
                            Cut peppers up, remove seeds if you want and place them in container.
                            Heat for about 3 hours (not boiling), halfway through add rum/vodka and sugar.
                            Strain peppers and set remaining liquid aside.
                            Place peppers in food processor and grind into pulp, adding small amounts of the
                            remaining liquid til you have the consistency you'd like.
                            Enjoy!!!!!! (should stay in fridge for a while...)

Salsa Verde - A DELICIOUS salsa that is light and refreshing...
What ya need 1 pound tomatillos

3/4 cup cilantro

2 TBSP lime juice

2 serranos

1 tsp salt and sugar

What ya do  

Put everything in a blender and puree.  Strain according to desired consistency.
